An Exploratory Analysis of European Food Consumption Patterns

چکیده
This paper explores the heterogeneity of food consumption patterns in Europe. Estimates of the income elasticity of calorie demand are contrasted with those based on animal products. The dietary intake and the consumption of the main foods are analysed. The purpose is to outline the main dimensions of food consumption and identify the clusters of countries with homogeneous dietary patterns. The paper concludes with a discussion of the concept of hard core clusters.
